How to "Do not log" an user?
How to do not log an update? (in order to avoid the .txt file "uploaded by...")

1. i fear it's not possible at the moment.
i will see if i can easily introduce an [event] to let you exclude anything from the log, in next versions.

2. i don't understand how updates are related to the "uploaded by".
anyway, this latter thing is determined by the template itself.
by customizing the tepmlate, you can remove it.
the way i suggest to do this, is to go to the root/home element of the virtual file system, properties, diff template, and put this code

[upload-success]
<li><a href='%item-url%'>%item-name%</a>: <b>{.!OK.}</b> --- %item-size%  ({.!Speed.} %speed% KB/s)

this will fit if you are currently using the default template.

2. Sorry, I meant  "How to do not log an upload"

Would be interesting to disable my administrator account log's for navigation and/or uploads.

You already have the log options to:
1. do not log address and
2. assign name to address

Maybe that's all you need - assign your name to your address and your activity shouldn't be logged.

It works from "Do not log adress..." however "Current connections" and "Total In/Out" still enabled (can I disable it?)
Anyway I would prefer "Do not log user"

the log is currently considered a different thing than the "current connections" and "total in/out",
thus such an option would affect only the log
